The short answer is: Yes you can! However, don't use the dot local in your Fully Qualified Domain Name as it is reserved for Bonjour. I would also advice against using the dot private space, but rather obtain and use a registered domain space. The rationale behind it: You might change your mind later, normally sooner rather than later!
Now for the nitty gritty: There are several very good resources available on the net, and in the App Store.
I will cite a couple for you:
http://krypted.com/guides/el-capitan-server/ by Charles Edge who has also authored a couple of very good books
I strongly recommend the three books by Reid Bondonis available on the App Store for El Capitan. They are worth every cent.
Then there is the series of video tutorials by Todd Olthoff at http://www.toddolthoff.com/technology/ECS10.11.html
In addition, directly from Apple you can and should https://help.apple.com/serverapp/mac/5.1/#/apd6015d9573 for a lot of information.
Finally, last but not least there are a wealth of resources available at Apple - Support - Manuals
